Raspberry tarts

Here’s my healthy raspberry tarts recipe. You will find the  dough recipe, ( with coconut oil and almonds ) and the cream recipe. The recipe is healthy of course😉 .



For the dough:

-150 g flour

-25 g coconut oil (solid)

-6 tablespoons of water

-30 g cane sugar

-25 g almond powder

-Vanilla beans / vanilla bean

-1 pinch of salt


For the cream:

-35 g cane sugar

-350 ml of milk

-vanilla bean/ vanilla bean/ vanilla sugar

-30 g of cornstarch

-2 egg yolks



For the dough:

1-Begin by mixing together all the dry ingredients: flour, sugar, almond powder, vanilla seeds and a pinch of salt.

2-Melt the coconut oil in the microwave.

3-Make a well in your salad bowl and pour the coconut oil into it. Mix well with your fingertips, trying to “crumble” the preparation. Then add the water, mix, and form a ball of dough. After protecting your dough with cling film, place it in the refrigerator for at least 1 hour.

4-Preheat your oven to 180°C. Then take the dough out of the fridge and spread it on a lightly floured worktop. Try to obtain a fairly thin dough.

5-You only have to darken your previously buttered moulds (I use coconut oil) with the dough. Bake for about 15 minutes.


For the cream:

1-First, mix the sugar, cornstarch, vanilla beans and the two egg yolks in a saucepan. Heat over low heat.

2-Slowly add the milk while stirring. Mix well without stopping until the cream has become thick and then let it cool.

3- Once cold, spread the cream over the pies.

4-Layer the raspberries on top.
