Almond-orange tarts

→Here is a healthy and original  almond-orange tarts recipe . These tarts are perfect for summer because they are refreshing and light. You will find the dough recipe  and the almond  cream recipe.



For the dough:
-150 g flour
-25 g coconut oil
-6 tablespoons of water
-30 g cane sugar
-25 g almond powder
-Vanilla beans / vanilla bean
-1 pinch of salt

For the almond cream:
-35 g cane sugar
-350 ml of milk
-vanilla seeds/ vanilla bean/ vanilla sugar
-30 g of cornstarch
-2 egg yolks
-25 g almond powder

→4 oranges
→70% cocoa chocolate



For the dough:

1-Begin by mixing together all the dry ingredients: flour, sugar, almond powder, vanilla seeds and the pinch of salt.

2-Melt the coconut oil in the microwave.

3-Make a well in your salad bowl and pour the coconut oil and water into it. Mix well with your fingertips, trying to “crumble” the preparation to obtain the “shortbread” dough. Then add the water, mix and form a ball of dough. After wrapping your dough with cling film, place it in the refrigerator for at least 1 hour.

4-Preheat your oven to 180°C. Then take the dough out of the fridge and spread it on a lightly floured worktop. Try to obtain a fairly thin dough.

5-You only have to put the dough into your previously buttered moulds (I use coconut oil). Bake for about 15 minutes.

For the almond cream:
1-First, mix the sugar, the cornstarch, the vanilla  and the two egg yolks in a saucepan. Heat over low heat.
2-Slowly add the milk while stirring. Mix well without stopping until the cream has become thick and then let it cool.

3- Once cold, spread the custard over the tarts.

4-Cut small pieces of orange and place them on top. Add some grated chocolate (chocolate 70% cocoa minimum preferably).
