Parmesan and pesto waffles
Here is a recipe which will remind you the flavours of Italy: parmesan waffles with pesto. I made a homemade pesto (but you can also use a ready-made pesto).
Ingredients for 8 waffles:
-250 g flour
-50 ml olive oil
-1 bag of yeast
-40 g grated parmesan
-2 tablespoons of pesto
-400 ml milk
•For the pesto:
-20 g basil leaves
-7 g pine nuts
-20 g parmesan
-4 teaspoons of olive oil
-1 small pinch of coarse salt
-1/2 clove of garlic
1-In a small bowl, mash the coarse salt with a mortar.
2-Then, do the same with the washed basil, but add it little by little.
3-Once your basil has been well mashed, slightly toast your pine nuts (for a few seconds only, stop cooking as soon as they start to brown).
4-Add your pine nuts to the preparation and crush them as well.
5-Add your grated parmesan and mix.
6-Finally, pour the olive oil little by little and mix well.
Your pesto is ready!
•For the waffles:
1-Start by mixing together the dry ingredients in a bowl: flour, yeast and salt.
2- By making a well, add the eggs and the olive oil. Mix well, pouring in the milk little by little.
3-Add now the pesto, the parmesan and a good handful of arugula, mix well.
4-Bake your dough in a waffle iron.
Your parmesan waffles with pesto are ready!
