INGREDIENTS: FOR ABOUT 8 PEOPLE
-2 pumpkins (small size)
-3 potatoes (medium size)
-1 teaspoon of nutmeg
-Salt and pepper
-A large volume of water: about 1 litre.
1-I cut the pumpkin into large pieces after washing and deseeding it. I can leave its skin (it becomes tender when cooked). I also cut the onion and potatoes.
2-I put all the ingredients in a large saucepan: I add the water and season.
3- I leave the whole thing to cook for about half an hour: the vegetables should be tender.
4- I can then blend everything with a hand blender.
5-It’s ready! The texture is very thick: you can add some water. Your healthy, quick and delicious wintertime pumpkin recipe is ready to eat!
